Green Onion Salad

  • About 3-4 Green onions, shredded
  • large bowl of ice cold water
  • 1 teaspoon mushroom powder
  • 1 teaspoon red pepper flakes
  • 1 tablespoon sesame seeds
  • Drizzle of sesame oil

As you can see in the picture, I have the green onion cutting tool. Shred the green onions. Cut them the long way; from top to bottom. Then cut them into 3 inches. If you're going to use a knife to shred, it might be easier to cut them into 3 inches first and then start slicing thinly lengthwise. Next, throw the shredded onions into a bowl of ice water.

There are two reasons why I bath the green onions in ice water. First, it keeps the green onions super crispy. Second, it cools down the spicy flavor and smell. Strain and shake off the excess water. Add mushroom powder, dried red pepper, and sesame seed. Slightly drizzle sesame oil. Keep the oil light so the green onions don't get soggy. Lightly toss. Serve immediately. This salad is a side dish that goes perfectly with bulgogi lettuce wrap. The salad is too spicy to just eat alone. You can use this salad for garnishing as well.
