Walnut Spinach Pesto

  • 2 cups baby spinach
  • 1 cup basil
  • 1/2 cup walnuts
  • 4 cloves garlic
  • salt and pepper
  • 2 tablespoon extra virgin olive oil 
  • more olive oil

Boil a pot of water. Once the water starts to boil, add the spinach and basil. Cook for 30 seconds to 1 minutes. Don't overcook. Drain and rinse with cold water. Squeeze water.

Put spinach, basil, garlic, walnuts, and olive oil into blender. Add a pinch of salt and pepper. Blend. Add more olive oil while blending until you get the consistency you desire. Add more salt if needed. 

I use olive oil to the bare minimum just enough to blend. You can always add more olive oil later. When I use the pesto for sandwiches, I don't like it to be too oily. When i use it for soups, I just add more olive oil.
