Vegan Hummus Pizza

  • Fresh pizza dough (Trader's Joe)
  • Garlic hummus (Trader's Joe) 
  • 1/2 Cup pesto 
  • 1/2 Cup Sun dried Tomatoes
  • 1 Cup Arugula
  • 1 Cup Mixed Greens
  • 1/2 Cup Radicchio
  • 1/2 Avocado
  • 1/2 Tofu
  • 2 Cloves of garlic
  • Balsamic Vinaigrette

Leave the pizza dough out in room temperature for 20 minutes. First start with the tofu crumble. Drizzle oil on the pan and put heat on high. Mash the tofu with your hands. Throw in the garlic and a dash of mushroom powder. Cook until tofu turns slightly brown and crispy. Leave aside.

Turn on the oven to 350. Lightly oil the pan. Roll out the pizza dough. It doesn't have to be a perfectly round.  Mix the hummus and pesto together. Thinly spread it on the rolled out pizza dough. Top it with the sun dried tomato and put in oven. Cook until lightly brown. Roughly 15-20 minutes.

While the pizza is cooking prepare the salad. Once the pizza is done, take it out of the oven. Lightly dress the salad and toss. Put salad over pizza. Lay the sliced avocado on top of greens. Top the pizza with the tofu crumble. Serve immediately. The heat from the pizza will start cooking the salad so toss the greens right before serving.
